El trigo espelta tiene una morfología muy distinta a la del trigo y bien reconocible.

Una de las características mas notables de la espelta es su espiga, de forma alargada, sin arístas, y su grano tiene una cáscara mucho mas dura que el trigo. La espiga puede medir hasta 20 cm, y es fomada por espiguillas con granos de dos en dos.
